Involving the future generations of the foodservice industry
Seafood Choices Alliance organizes conferences in catering schools, in the various regions of France.
The aim of these conferences is to raise the awareness and inform students on the current status of marine resources, through presentations and discussions between different stakeholders in the seafood industry – chefs, fishmongers, wholesalers, retailers and fishermen - and the participants. Seafood Choices tries to help the students realize the key role they can and will play in influencing both the supply chain and consumers. Seafood Choices Alliance’s Guide des espèces à l’usage des professionnels is distributed to all the students who attend the conference.
A film is also presented to attendess, Alerte sur la resource, by Emmanuel Audrain, released in 2002 on France 3 Ouest (French regional TV channel), which shows fishermen and scientists who recognize the mistakes made in the past. This documentary film presents the evolution of fisheries and the work of fishermen, as well as the changes in fish populations, their decrease in size and the shrinkage of the species; it recognizes that regulations are not always implemented. Fishermen speak freely and explain why they always have to catch more fish to secure a return on their boats; however, the fishermen also admit they should fish less to allow the resources to renew. The film concludes by exploring various solutions for the future.

To conclude the event, cooking demonstration of sustainable seafood are proposed to the audience.
